The Glencoe Golf Club is seeking proposals from experienced food service providers to operate a year-round food and beverage service concession within its new clubhouse facility. The selected vendor will be responsible for providing comprehensive food and beverage services. Questions must be submitted by December 8, 2025, at 4:30 PM CST. Proposals are due December 29, 2025, at 4:00 PM CST. The village intends to execute a concession agreement for a period of four years with the option to renew for two successive three-year terms. The vendor must provide a detailed schedule of proposed hours of operation to the owner for approval before the finalization of the concession agreement. Proposers are directed to provide proposed financial terms for the concession, which should include an annual base fee, a percentage of gross revenue, or a combination thereof. Proposers may offer other financial terms for consideration.
The village will select a firm based on the following criteria: completeness of the proposal, qualifications and experience of firm, including professional qualifications and skills of staff, experience/performance review of past performance on similar food and beverage operations, evaluations of references, etc. , financial stability of the firm, expressed understanding of the nature and scope of the services being requested, the extent to which the proposed food and beverage services would enhance recreational activities, the extent to which the proposed food and beverage services are consistent with the aesthetic and functional nature and planned use of the proposed location, the quality, including the creative or innovative nature of the proposed foods and beverages, the sustainability plan, and any other factor that the committee may deem relevant.
Proposers seeking award of the concession must: demonstrate at least three years of experience in the successful development and provision of a quality full-service restaurant/bar and banquet service, be eligible and qualified to obtain and maintain a liquor license through the village and the state of Illinois, pass a background check including fingerprinting, demonstrate adequate financial strength to sustain operations and provide reasonable working capital, be capable of providing concession, banquet and beverage service no later than the specific date determined by owner following the contract award.
