The concessionaire will operate a quick-serve Asian-inspired cuisine restaurant at the RAF Mildenhall bowling center. The contract is for one year with a possible four-year extension. The concessionaire is responsible for providing all personnel, transportation, supervision,
food and supplies, and must follow the agreed-upon menu, including vegetarian options. The concessionaire will receive **** per month and must pay by the second business day of the month. The concessionaire will have a four-week transition period to become fully operational. The NAFI will provide space, electricity, water, drainage, heat, and trash collection. The concessionaire is responsible for insurance, menu updates, point-of-sale system, and cleanup. The concessionaire must comply with US Air Force regulations, including
food safety, security, and safety requirements. Employees must have health certificates, training certificates, and a favorable police background check. The concessionaire must provide a contract manager and alternate. The concessionaire is responsible for maintaining the cleanliness of the kitchen, storeroom, dining area, and other affected areas. The concessionaire must comply with the Tri-Service
Food Code. The NAFI will evaluate the concessionaire's performance. The concessionaire must provide a list of employees with full names, places of birth, current addresses, identification numbers, and photocopies of IDs. The concessionaire must ensure all employees have the required professional certifications. The concessionaire must adhere to the existing customer comment program. The concessionaire must operate the concession from **** to **** hours Monday through Saturday, including British holidays. The concessionaire is not required to provide services on US holidays. The concessionaire is responsible for safeguarding all NAFI property. The concessionaire will be subject to an annual property inventory. The concessionaire is responsible for the repair/replacement of any broken, lost, or damaged contents. The concessionaire must supply secure dry storage equipment. The concessionaire is responsible for any costs associated with the installation and operation of commercial telephones. The concessionaire must comply with fire protection and prevention regulations and the fire defense plan. The concessionaire must comply with sanitary standards prescribed by the NAFI and bacteriological requirements established by current directives. The concessionaire's personnel and facilities are subject to inspection by medical and safety teams without advance notice.
