Performance Work Statement for a NAF Restaurant Concessionaire at RAF Lakenheath Fitness Center, Juice Bar The contractor shall provide all personnel, transportation, supervision and all food and related supplies required to operate a juice bar cafe within the fitness center. The contractor must prepare and serve a diverse menu to include specialty sports drinks, 100 fruit juices, smoothies fresh frozen fruit and or vegetable and other assorted healthy beverages to include protein shakes, fat burning shakes, weight loss shakes, and healthy menu items to include sandwiches, wraps, paninis, breakfast items and salads to authorized patrons all personnel with base access for consumption on the premises or for take away. concessionaire must provide a minimum of three 3 offerings per category. Services required include all of the basic functions of running a restaurant: menu planning, subsistence ordering, receiving, and storing, food preparation, service for both dine in and take away, and cleanup.
